Reminiscing

Alright all you Bingham Miners out there. Does anybody remember the Navajo tacos from the cafeteria? It's just about the only thing I would eat from the cafeteria but I sure loved them. Honestly, I forgot all about them until I drove past Taco Time and saw their billboard for their Navajo tacos and I knew it was time to recreate the goodness.

I asked Darin what he thought of them and he said it was "good". I hate when a husband says your cooking is only "good", when clearly it is GREAT or WONDERFUL or DELICIOUS. This Navajo taco was even better than what I remember from Bingham. So you must make these for dinner. Tonight.
I only cook for me and Darin so you may want to double the recipe if you're feeding more.

Ingredients:

1/2 lb ground beef
small yellow onion, diced
1/2 can black beans
1/2 cup frozen corn (canned would work too)
taco seasoning
1/2 cup salsa (I used my homemade salsa and it was so yummy!)
scone dough (I used a boxed mix from the grocery store, but feel free to use whatever scones you like)
Oil
1/2 cup shredded cheddar cheese
shredded lettuce
sour cream

Brown ground beef and onions and drain. Return to pan and add black beans, corn, salsa and taco seasoning to taste. Roll out scone dough and cut into large circles. Fry in oil until golden brown on both sides. Top scone with cheese and then a scoop of meat mixture. Add lettuce, sour cream and any other toppings of your choice!

Jess I so remember the Navajo tacos!!! They were one of the only things I would eat at our cafeteria as well (beside there baked potatoes)! I to have made them a few times for my family but instead of ground beef and beans I used chili which is about the same thing with half of the time!

Mmmmmmmmm, I love navajo tacos! I've made them a couple of times and they are so easy and yummy!

Call me crazy but I LOVED my high school's cafeteria food. It was the "cool" thing to do too, eat in the cafeteria. There are several things that I still crave, weird.
